healthy baked chicken strips



2 chicken breasts

1 cup flour

1 tsp salt

1 tsp pepper

2 eggs

1 cup Italian style panko bread crumbs whole wheat or plain panko will work, too


Preheat the oven to 350 degrees.
Cut the chicken breasts into strips of equal size.
Take 3 bowls. Add flour, salt and pepper in 1 bowl. Mix well. In another bowl beat 2 eggs. In a third bowl, add 1 cup of Italian panko breadcrumbs.
Dip each piece of chicken in flour, then egg and panko breadcrumbs.
Place the chicken strips on a greased or covered parchment tray.
Bake for 20-25 minutes or until cooked. Turn the chicken strips in the middle of cooking to ensure uniform sweetness and crunchiness.
Serve with Ranch sauce, barbecue or your favorite dipping sauce.

To freeze: After dipping the chicken in flour, eggs and panko bread crumbs, place it on a tray covered with parchment and let it freeze for a few hours or even freeze. Transfer the product to a freezer with a secure zipper and place it in the freezer.
To bake: Place frozen strips on baking paper and bake at 350 degrees for 30-35 minutes or until baked.
