1 1/2 to 2 pounds potatoes (about 3 large potatoes), peeled and quartered
8 Tablespoons (1 stick) butter
1 medium onion, chopped (about 1 1/2 cups)
1-2 cups vegetables—diced carrots, corn, peas
1 1/2 lbs ground round beef
1/2 cup beef broth
1 teaspoon Worcestershire sauce
Salt, pepper, other seasonings of choice
1 Boil the potatoes: Place the peeled and cut potatoes in medium sized pans. Cover with at least one centimeter of cold water. Add one teaspoon of salt. Bring to the boil, reduce to low heat and cook until soft (about 20 minutes).
2 Sautéed vegetables: While the potatoes are boiling, melt 4 tablespoons of butter in a large pan over medium heat. Add the chopped onion and cook for about 6 to 10 minutes until soft.
If you include vegetables, add them according to their cooking time. The carrots should be cooked together with the onions, as they take as long as the onions.
If you add peas or corn, add them at the end of cooking the onion or after the meat has started to cook, because they need very little time to cook.
3 Add the minced meat, then the Worcestershire sauce and broth: put the minced meat in the pan with the onions and vegetables. Cook until it is no longer pink. Season with salt and pepper.
Add Worcestershire sauce and broth. Bring the broth to a low heat and reduce the heat to a low heat. Cook for 10 minutes without lid, add more broth if necessary to prevent the meat from drying out.
4 Mix the cooked potatoes: when the potatoes are cooked (a fork can easily pierce them), take them out of the pan and put them in a bowl with the remaining 4 tablespoons of butter. Mash the seasoning with a fork or a potato press and season with salt and pepper to taste.
5 Put the meat mixture and the mashed potatoes in a pan: Preheat the oven to 400°F. Spread the beef, onion and vegetables (if used) in a large pan (9×13 pan) in an even layer.
Spread the mashed potatoes on top of the minced meat. Dilute the surface of the mashed potatoes with a fork so that there are tips that turn very golden. You can even use a fork to make the mashed potatoes creative.
6 Bake in the oven: Place in the oven at 400°F and bake for about 30 minutes until golden brown and bubbling. If necessary, grill for the last few minutes so that the surface of the mashed potatoes becomes brown.
(Be careful when grilling with Pyrex or glass plates, as these are known to break under the high heat of the grill. It is not a problem if you use a ceramic bowl or a metal pan)
