2 tablespoons light butter, softened
1-1 / 2 pounds sweet potatoes
3/4 cup light brown sugar, loose
1/2 cup of 1% milk
1/2 teaspoon ground pumpkin pie spice
2 large eggs
1/2 teaspoon ground cinnamon
1 9-inch uncooked pie crust
1 teaspoon vanilla extract
Boil sweet potatoes whole with their skins for 50 to 55 minutes or until tender. Run cold water over the sweet potato and peel off the skin. Combine the potatoes in a blender and beat for about a minute to remove all the fibers.
Place the sweet potatoes in a bowl. Add the butter and mix well. Using an electric mixer, mix in the sugar, milk, eggs, cinnamon, and vanilla. Beat on medium speed until mixture is smooth. Pour the filling into a raw pie crust.
Bake at 350 degrees for 55 to 60 minutes, or until knife inserted in center comes out clean. Serve with a cold mixer and enjoy dont forget to share with friends
