2 ounces of cream cheese, softened
4 boneless, skinless chicken breasts
1/4 cup grated mozzarella cheese
1/4 cup grated cheddar cheese
2 teaspoons finely chopped parsley
1/4 teaspoon garlic powder
8 slices of bacon
salt and pepper to taste
Optional garnish: chopped parsley
1 pound small new potatoes cut in half
Preheat the oven to 400 degrees F. Line a saucepan with foil and coat with cooking spray.
Using a small knife, cut a slit lengthwise in the middle of each chicken breast to create a deep pocket.
In a small bowl, combine the cream cheese, cheddar, mozzarella, parsley and garlic powder. Season with salt and pepper to taste.
Pour the cheese mixture evenly into the pocket of each chicken breast. You can also put the filling in a plastic bag and cut off the tip to create a makeshift pastry bag for pressing the filling into the chicken.
Season the top of each chicken breast with S&P, then wrap 2 slices of bacon around each chicken breast.
Place the chicken breasts in the pan; Spread the potatoes around the chicken. Coat the potatoes with cooking spray and season with S&P.
Place in the oven and cook for 40 minutes. Grill 3 to 5 minutes longer or until bacon is golden and crispy.
Serve immediately, with chopped parsley for garnish if desired.
